I LOVE the history log of Time Off Requests but over time, this log will become difficult to interact with. I'm requesting some kind of date range filter on that page so Managers don't have to scroll through pages and pages of records.

100% - I was about to suggest the same. organizing it by date so all the time off requests for a day are by each other so you can visualize who asked for the same days off so we don't approve too many at the same day. Also by approved / not approved.
